Troy's Take
A ton of you kept DMing me to go to Swagat. I had to see if the hype was real, and I can't believe I've lived here this long without going. This might be my new number one Indian spot in Madison.
The manchurian chicken was the biggest standout. Savory, slightly tangy, crispy outside and tender inside, coated in a sauce that sends you right back for another bite. The gobi manchurian had elite crunch with fresh garlic throughout and a sauce that coats without going soggy. Chicken tikka masala is my measuring stick for any Indian restaurant, and here the chicken melts and the sauce is creamy and rich without feeling heavy.
Chicken 65 was crispy and bold if you like dry-style. Masala fries were genuinely crispy with seasoning that sticks. The dosa was light and flaky. The ice cream was creamier and less sugary than standard, with pistachio and mango especially strong. Ras malai was too soft for me, but I'm a texture guy.
The room is big, lively and built for volume. Go on a weekend, come hungry, and don't skip dessert.
