Pa'Que Roberto on Raymond Road is one of the best hidden gems in Madison. It was packed to the brim, people in and out the whole time, and the owners were some of the nicest people I have ever met.

The cachapa is a cornmeal pancake stuffed with cheese and meat. It tastes like a soft fluffy pancake with a little syrup, cheese, and meat that melts in your mouth. Unreal.

Tequenos with garlic sauce are much better than a mozzarella stick, and the spicy sauce has a kick. Arepas are packed with flavor, and the chicha tastes like a thicker, sweeter horchata.

A lot of the menu is gluten free thanks to cornmeal and plantains. It is right next to a Kwik Trip. Go now, because this will not stay a hidden gem for long.

  • Get the cachapa. Cornmeal pancake with cheese and meat. Sweet and savory, and unreal.
  • Tequenos come with a garlic sauce and a spicy sauce. Try both.
  • Right next to a Kwik Trip with a small lot, and it gets packed. A lot of the menu is naturally gluten free since it uses cornmeal and plantains.
