Hmong Legacy Market

This is less of a restaurant and more of a cultural treasure chest right here in Madison. You walk in and there are traditional Hmong clothes and handcrafted items on one side and a full grocery store on the other. Walk all the way to the back to find the deli window, order, and eat there or take it out.

I went straight for the showstopper: egg roll stuffed chicken wings, also called Angel Wings. These are easily the most unique wings I have ever touched. They debone the wing, stuff it with egg roll filling of pork and noodles, and reconstruct it. Imagine a chicken egg roll, but instead of a wrapper it's crispy chicken skin.

I want to shout out the Hmong community here, because deboning a wing by hand without tearing the skin takes years of practice. Most people save these for big celebrations, and the fact that we can walk in and buy them on a random Wednesday is a gift.

If you're craving classic Buffalo, this isn't that. If you want a one-of-a-kind savory flavor bomb, you're in the right place. Use the hot sauce. It has a serious kick.
