Troy's Take

This place keeps coming up for their sourdough, their cakes, and their baked goods. Madison Sourdough on Willy Street. I finally went in with a box of pastries and let them cook.

I got a kouign-amann, a chocolate almond croissant, a morning bun, and a regular almond croissant. No cake this time, even though people swear theirs are some of the best around for weddings and birthdays.

Standouts and misses: the chocolate almond croissant was the clear winner. Flaky, lighter, and that almond filling plus chocolate bite was unreal. The kouign-amann was buttery and thickly glazed, but a little harder and less flaky than I wanted. Morning bun was sugary and flaky, good but not as buttery as I hoped. Regular almond croissant filling was perfect, not too sweet, but the croissant itself felt a little rough.

All in all, pretty solid bakery. They make some of the best sourdough you can get in Madison. Alimentari uses their bread for sandwiches and those are out of this world. Adorable little spot inside. Go check them out on Willy Street.
