Bri's Fresh Bakes

This is Bri's Fresh Bakes out in Sun Prairie. Before the storefront, she only sold her baked goods at the farmers market. When I went, the line was completely wrapped around the building, and I got there 20 minutes early. Take that how you will. If you want to try Bri's Fresh Bakes, get there early.

My thoughts on the food

Carrot cake croissant first. My first bite was only the croissant part, and it is soft, flaky and buttery. That cream on top is wow. It is literally carrot cake in a croissant. Take the top off and it is straight up carrot cake. I mean it when I say this is the best carrot cake anything I have ever had in my life.

The Nutella cruffin is soft and sugary, and it is huge. Hey Bri, if you are reading this, what is the correct way to eat this? It is so fluffy in the middle, a perfect mix of soft, flaky and fluffy.

The pistachio croissant, I just ate like a sandwich. I can not get over how perfectly done each of these croissants is. It is not overkill on the pistachio, there is a very light sweetness, and the cream in the middle is delicious. What I love most is that it does not kill you with how sweet it is. It is a light, cold cream perfectly balanced with the size of the croissant. And the chocolate chip cookie is loaded with chocolate chips.

Important and interesting info

• Six items ran me 37 bucks, and every pastry is massive.
• Only open Thursday through Saturday. Do not go on the wrong day.
• Get there early. Wait in line, make some friends with your neighbors, and it is well worth the wait.

The verdict

I am blown away. Everything was massive and all of it was unbelievable. This is by far the best bakery I have ever been to in my entire life. Bri's Fresh Bakes in Sun Prairie is out of this world. I do not think I will ever have baked goods this good again.
